Spinach Fettuccine and Shiitake Mushroom Salad

INGREDIENTS

1 pack spinach shirataki fettuccine noodles, rinsed and drained
3 large shiitake mushrooms, sliced
½ medium red onion, minced
6 basil leaves, chopped
3 tablespoons fresh lemon juice
2 tablespoons water
3 drops liquid stevia
¼ teaspoon sea salt
6 ounces nitrate free smoked salmon

DIRECTIONS

Combine sliced shiitake mushrooms, onion, basil, lemon, water, stevia and salt in a large bowl. Let it sit for 5 minutes, until the mushrooms have absorbed most of the liquid.

Add fettuccine to the bowl and toss well. Transfer to a plate and top with smoked salmon.
