Chocolate Slow-Cooker Oatmeal

Phase 1 and 3 | Makes about 4 cups  
Prep time: 5 minutes | Total time: 6 to 7 hours

Ingredients

4 1/2 cups water
1 cup steel-cut oats
1/4 cup raw cacao powder
1 tsp. vanilla
6 packets stevia, or to taste

    Directions

    1. Combine the water and oats in a slow cooker. Cover and cook on low heat for 6 to 7 hours. (If your slow cooker switches to “warm” after it’s finished, that’s fine — the oatmeal can sit in there for an hour or two.)

    2. When you’re ready to serve, stir in the cacao, vanilla, and stevia. You can dress up this basic chocolate oatmeal — here are a few variations:
    •  Berries and Cream: Stir in a splash of rice milk and top with fresh berries.
    • Mexican Hot Chocolate: Add 1/4 teaspoon cinnamon.
    • Phase 3 add-ins: Try coconut milk, shredded coconut, almonds, or cacao nibs. 1/2 cup is the serving on Phase 3 (Serves about 8)
