Quick & Easy Lemon Cream Pops
Crisp and creamy at the same time, these zingy lemon pops are frozen bites of sunshine. Try adding chopped fresh mint, lavender, or basil. Or switch out the lemon for lime and you’ve got limeade pops. And because these are made with our Fast Metabolism Quick & Easy Dessert and Snack Mix, you can enjoy them in any Phase of The Fast Metabolism Diet, including Phase 2!
Lemon Cream Pops
Makes seven 3-ounce pops
Prep time: 5 minutes
Total time: 5 hours (includes freezing time)
Enjoy as an anytime snack on any phase of any of Haylie’s programs
1/2 cup xylitol
1 1/4 cups hot water
1/4 cup cold water
1/4 cup lemon juice
1 tablespoon finely grated lemon zest
Pinch of sea salt
Stir the xylitol into the hot water until it dissolves. Add the cold water and lemon juice.
In a separate bowl, whisk together the Dessert and Snack Mix, lemon zest, and sea salt. Whisk the wet ingredients into the dry ingredients. Pour into 3-ounce popsicle molds. Add sticks, if your popsicle mold has a lid that will hold the sticks upright (if not, just freeze for an hour and then add sticks). Freeze until solid (about 5 hours total).
