½ cup edamame, cooked and cooled
1/2 cup chopped broccoli
1/2 cup diced red bell pepper
1/4 cup diced cucumber
1/4 cup diced green onion (scallion), white and green parts
1/4 cup diced pepperoncini
Lime juice to taste
Tamari to taste
In a medium bowl, toss edamame and broccoli with the bell pepper, cucumber, green onion, and pepperoncini. Dress with lime juice and a splash of tamari.
