Spicy Egg White Salad

INGREDIENTS

Dressing:

3 hard-boiled egg whites 
2 tablespoons coconut aminos
1 tablespoon pickle brine (from the dill pickles, below)
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon marjoram
1/4 teaspoon sea salt, or to taste

Salad:

6 hard-boiled egg whites, chopped finely
1/4 cucumber, chopped finely
2 to 3 dill pickles chips, chopped finely (no sugar added)
2 tablespoons chopped roasted red peppers
1/2 teaspoon crushed red pepper flakes, or to taste
5 cups salad greens

DIRECTIONS

  1. Place all dressing ingredients in a blender, and blend until smooth.

  2. In a large mixing bowl, combine the egg whites, cucumbers, pickles and roasted red peppers and set aside.

  3. Pour the dressing over the egg mixture and mix gently. Season with the red pepper flakes, to taste. Serve over salad greens.
