Spicy Egg White Salad

Phase 2 | Serves 3 (as a meal)
Prep time: 10 minutes | Total time: 15 minutes
INGREDIENTS
Dressing:
3 hard-boiled egg whites
2 tablespoons coconut aminos
1 tablespoon pickle brine (from the dill pickles, below)
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
1/2 teaspoon marjoram
1/4 teaspoon sea salt, or to taste
Salad:
6 hard-boiled egg whites, chopped finely
1/4 cucumber, chopped finely
2 to 3 dill pickles chips, chopped finely (no sugar added)
2 tablespoons chopped roasted red peppers
1/2 teaspoon crushed red pepper flakes, or to taste
5 cups salad greens
DIRECTIONS
- Place all dressing ingredients in a blender, and blend until smooth.
- In a large mixing bowl, combine the egg whites, cucumbers, pickles and roasted red peppers and set aside.
- Pour the dressing over the egg mixture and mix gently. Season with the red pepper flakes, to taste. Serve over salad greens.
