Creamy Guacamole

INGREDIENTS
1 teaspoon safflower mayonnaise
1/2 avocado
1 teaspoon cilantro
1 teaspoon lime juice
1/8 teaspoon cracked red pepper
Salt and pepper to taste
1 cup sliced cucumber or jicama
DIRECTIONS

Hummus
Phase 3 | Serving: 1/3 cup

INGREDIENTS
1 1/2 cups dried chickpeas
Olive oil to taste
3 tablespoons fresh lemon juice
3-4 cloves garlic, minced and pressed
DIRECTIONS
- Pour 1-1/2 cups dried chickpeas (garbanzo beans) into your crock pot; add enough water to cover the chickpeas, plus one inch.
- Cook on high for four to five hours, checking periodically and adding hot water as needed, or cook on low overnight.
- Drain the chickpeas. Reserve the water.
- Blend the chickpeas, adding the water back in until your hummus reaches the desired texture.
- Stir in a drizzle of olive oil, 3 tablespoons of fresh lemon juice, and several cloves of minced, pressed, or grated garlic (to taste).
Coconut Sour Cream
Phase 3 | Makes about 1/2 cup
Prep time: 5 minutes | Total time: 5 minutes
INGREDIENTS
Cream from 1 15-ounce can coconut milk
1 or 2 tablespoons lemon juice
1/8 teaspoon sea salt
DIRECTIONS
- In a medium bowl, whisk together the coconut cream, lemon juice and salt until combined.
- Adjust salt to taste and add more lemon, if desired.
- Refrigerate for about an hour before serving to allow flavors to combine.
- Depending on the coconut milk you buy, your sour cream might end up a little grainier than dairy sour cream. You can also strain it through a fine sieve if you want it extra smooth. That’s it!
