So what is metabolism, exactly? First, metabolism is a process, not an object. Specifically, the metabolic process consists of chemical reactions that occur in the cells of all living organisms to sustain life. It’s the change or transformation of food into either heat and fuel or substance(muscle, fat, blood, bone). At any given moment, your metabolism is either burning, storing, or building.

You have a metabolism because you are alive, and life requires energy. We all need energy to survive - to breathe, move, think, and react - and the only way to acquire this energy is from food. Food that you have shopped for, chopped, cooked, and enjoyed. Profound! A healthy, functional metabolism allows us to have the perfect amount of energy available, an appropriate amount of reserve energy stored and ready to use, and a strong and stable structure(the body).

But an unhealthy metabolism, a slow metabolism, can’t efficiently access the fuel from the food you eat, so instead of burning that fuel as energy, it stores it as fat on your body, saving it for a time when your body is in a healthier state. Dieting, nutrient void foods, hormone imbalances, consuming chemicals and industrial pollutants mislabeled in the name of food, and living with too much stress are what slow down your metabolism when it should be sped up.

You may have tried a few or a few dozen diets in the past. You may have counted calories and fat grams or eaten packaged foods that had a shelf life of a million years. You may be frustrated with diets because you just can’t stand to eat another fake cookie or disgusting bar or some artificially flavored and sweetened diet product all in the name of losing weight. Maybe you are even angry about investing time and money in a program that didn’t account for the fact that you are a real person with real demands and need desires. Or maybe you lost weight but never repaired your metabolism, so the second you went off plan the weight came aggressively back. Maybe you are mad because you were never taught to shop for and prepare and cook healthy foods for yourself.

Zucchini Fries

Phase 1 and Phase 3 | Serves 3-4


  • 2 medium to large zucchini
  • 2 egg whites
  • 1 cup sprouted grain breadcrumbs
  • 1 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper


  1. Clean and pat dry the zucchini, then cut into wedges about 1/2″ thick.
  2. Lightly beat the egg whites and place in a shallow bowl or on a plate. Mix the breadcrumbs with the salt, garlic, and pepper (and any other spices of your choosing) and place on a separate plate. Dunk the zucchini sticks into the egg white, allowing any excess to drip off, then into the breadcrumbs, trying to adhere an even coat without having it come off in clumps – though some bare spots are not the end of the world.
  3. Spread the zucchini on a greased baking pan and bake at 450 F for about 10 minutes on each side.
