Fast Metabolism Nachos, Video

This is one of my all-time favorite recipes: Fast Metabolism Nachos topped with Easy Peasy
Nacho Cheesy! In this recipe, nachos actually become a healthy meal instead of junk food. These
nachos are crunchy, cheesy, and delicious, but with no dairy and no corn. They are perfect for Phase 3.

Don’t be intimidated by this recipe—the results are impressive but the method is super easy, and
you’re going to be so happy you’ve got this in your toolbox, whether it’s for a party, a group of
friends, family, or just for you.

Phase 3 | Makes about 1 1/2 cups 
Prep time: 15 minutes | Total time: About 3 hours (including soaking time)

INGREDIENTS

Spelt tortillas—about 1 per person
1 1/2 cups orange or red bell pepper (or a combination)
1 cup raw cashews, soaked in water for at least 2 hours
1/4 cup nutritional yeast
1/4 cup canned green chilies
1 tsp. sea salt
1/2 tsp. garlic, minced
1/4 tsp. turmeric powder
1/4 tsp. onion powder
1/2 tsp. dry mustard
1/4 cup olive oil
Optional toppings:
Black, pinto, white, or kidney beans
Sliced jalapenos
Red onions
Salsa
Guacamole
Coconut sour cream
Shredded chicken
Sliced flank steak
Ground turkey
Steamed shrimp

DIRECTIONS

  1. Preheat the oven to 400 degrees. Cut the spelt tortillas in wedges with a sharp knife or a pizza cuter. Put them on a baking sheet and bake for about 10 minutes, or until they are your desired level of crispy.                            
  2. While the tortilla chips are baking, make the cheese sauce. Begin by coring, seeding, and chopping the peppers. Add them to a blender.                      
  3. On top of the peppers, add the cashews, nutritional yeast, green chilies, salt, garlic, and spices to the blender.                                                                    
  4. Blend until smooth and creamy, about 5 minutes (depending on the power of your blender).                                                                                              
  5. Once smooth, continue blending as you drizzle in the olive oil until just combined. Taste and adjust seasonings if desired.                                               
  6. Arrange the crispy tortilla chips on a plate. Top with any toppings you like, then drizzle with the cheese sauce.                                                                
  7. Store any extra cheese sauce in an airtight glass container in the fridge for up to a week.
