Cashew Cream Cheese with Chives
This cream cheese is savory and great for your morning bagel. If you have more of a sweet tooth in the morning, add your favorite berries instead of the chives.

Prep time: 4 to 8 hours | Total time: 4 hours 10 minutes
Ingredients
1 cup raw cashews, soaked in water for 4 to 8 hours or overnight
1 teaspoon fresh lemon juice, plus more as needed
1/2 teaspoon sea salt, plus more as needed
1 to 2 tablespoons water, as needed
1/4 cup finely chopped chives
Directions
- Drain and rinse the cashews. Put the cashews, 1 teaspoon of lemon juice, and the salt in a food processor, process until smooth, stopping to scrape down the sides as needed, about 5 minutes. Taste and add additional salt and/or lemon juice if you like. Add a tablespoon or two of water to thin the mixture as needed. Stir in chives.
- Serve immediately or transfer to an airtight container and refrigerate for up to 1 week.
