Cauliflower Mash Breakfast Bowl
Cleanse Days 8-10, Phase 3 | Serves 3
Prep time: 10 minutes | Total time: 35 minutes
Ingredients
1/2 head cauliflower, cut into florets
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1 tablespoon olive oil
2 cups cremini or baby bella mushrooms, cut in half
6 slices nitrate-free, no-sugar-added turkey bacon, chopped
1 garlic clove, minced
3 tablespoons coconut aminos
4 cups baby spinach
Directions
- Fill a saucepan with two inches of water and bring to a boil over high heat. Put the cauliflower into a steamer basket and set it over the boiling water. cover and cook until the cauliflower is soft, about 10 minutes (you should be a bye to pierce it easily with a fork). Put the cauliflower in a large bowl. Add 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper, then mash with a potato masher or fork until smooth. Divide the cauliflower mash among three bowls. Set aside.
- In a medium skillet, heat the olive oil over medium heat. Add the mushrooms, bacon, garlic, and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Sauce until the bacon is crisp and the mushrooms shrink down and soften, about 5 minutes. Add the coconut aminos and stir to coat the mushrooms. Stir in the spinach. Cook for 2 minutes more.
- Divide the bacon-mushroom mixture among the bowls of cauliflower mash and serve.
