1 1/2 cups sliced fresh mushrooms
1/2 cup chopped onion
1-2 tablespoons water (or homemade broth)
4 ounces fully cooked nitrate-free ham steak, diced
1/8 teaspoon black pepper
1/2 cup cooked brown rice
1 green onion, sliced
1 orange

DIRECTIONS
- In a large nonstick skillet over medium-high heat, sauté the mushrooms and onion in a few tablespoons of water (or homemade broth) until tender, about 4 minutes.
- Stir in the ham, pepper, and the brown rice. Reduce the heat; stirring until well mixed.
- Fluff with a fork. Top with green onions and serve with an orange.
