Hummus

INGREDIENTS
1 1/2 cups dried chickpeas
Olive oil to taste
3 tablespoons fresh lemon juice
3-4 cloves garlic, minced and pressed
DIRECTIONS
- Pour 1-1/2 cups dried chickpeas (garbanzo beans) into your crock pot; add enough water to cover the chickpeas, plus one inch.
- Cook on high for four to five hours, checking periodically and adding hot water as needed, or cook on low overnight.
- Drain the chickpeas. Reserve the water.
- Blend the chickpeas, adding the water back in until your hummus reaches the desired texture.
- Stir in a drizzle of olive oil, 3 tablespoons of fresh lemon juice, and several cloves of minced, pressed, or grated garlic (to taste).
