Minty Melon Salad from Cooking for a Fast Metabolism

Spring is here! Let's celebrate with a metabolism-boosting, adrenal-soothing, refreshing and delicious fruit salad! 

Phase 1 | Serves 6

Ingredients

2 cups watermelon cubes
2 cups cantaloupe cubes
2 cups honeydew melon cubes
2 cups jicama cubes
1 cup sliced cucumber
4 teaspoons lime zest
2 tablespoons fresh lime juice
8 drops liquid stevia (optional)
2 tablespoons finely chopped fresh mint leaves
1/4 teaspoon sea salt

Directions

  1. In a large serving bowl, combine the watermelon, cantaloupe, honeydew, jicama, and cucumber. In a small bowl, combine the lime zest, lime juice, and stevia (if using), then pour it over the melon mixture and toss to coat. Sprinkle with the mint and salt just before serving.
