Peachy Keen Dressing
Peaches are mild and creamy in a salad dressing. This dressing tastes especially good on a spinach salad or with baby greens. It’s also a nice dip for celery. You’ll only be using a couple of tablespoons at a time, so even though there’s fruit in this recipe, it’s okay to use it at dinner on Phase 1.
Phase 1 and 3 | Makes about 1 1/2 Cups
Prep Time: 5 minutes | Total Time: 5 minutes
Ingredients
2 peaches, peeled and sliced
3 tablespoons fresh lime juice
½ teaspoon powdered stevia
½ teaspoon ground cumin
¼ teaspoon sea salt
Directions
- Process all the ingredients in a blender until smooth, stopping to scrape down the sides.
Portion is 2 to 4 tablespoons
