Smoked Salmon and Bacon Salad

INGREDIENTS

1 small cucumber, sliced lengthwise
1/2 cup roasted red bell pepper strips
1/4 cup sliced red onion
4 cups arugula and baby greens (or your preferred mixed greens)
One 6-ounce fillet of smoked sockeye salmon
4 ounces nitrate-free turkey bacon, cooked and crumbled

Dressing:

3 tablespoons fresh lemon juice
1 tablespoon chopped fresh dill
Sea salt and freshly ground black pepper to taste

DIRECTIONS

1. Mix the chopped veggies with your greens of choice.

2. Place smoked salmon on top and sprinkle with bacon.

3. Whisk the dressing ingredients in a small bowl, and drizzle over the salad.
