Ingredients

4 hard-cooked egg whites, finely chopped
1 tablespoon minced dill pickle
1 tablespoon chopped scallions or chives
Endive leaves
4 ounces nitrate-free smoked salmon, sliced

Directions

Combine the hard-cooked egg whites, chopped pickle, and scallions or chives. Spoon into endive leaves, and top evenly with the smoked salmon.
