Spinach Mushroom Frittata

Metabolism Revolution Part 2 Breakfast | Serves 1
Prep time: 10 minutes | Total time: 25 minutes
INGREDIENTS MEAL MAP A
1 egg
4 egg whites
1/4 cup water
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
Pinch red pepper flakes
Sea salt and ground pepper to taste
2 slices turkey bacon, chopped (nitrate-free)
1 teaspoon garlic, minced
1/2 cup mushrooms, sliced
1 1/2 cups baby spinach
1 cup apple, sliced
MEAL MAP B ADAPTATIONS
3 eggs
0 egg whites
1/2 cup mushrooms, sliced
8 olives, pitted and sliced
0 apple slices
MEAL MAP C ADAPTATIONS
3 eggs
0 egg whites
1/2 cup mushrooms, sliced
3 cups baby spinach
8 olives, pitted and sliced
0 apple slices
INSTRUCTIONS
1. Preheat the oven to 425º F.
2. In a large bowl, whisk together the egg(s), egg whites (for Meal Map A), water, basil, oregano, thyme, red pepper flakes, sea salt and black pepper to taste. Set aside.
3. Heat a large, oven-safe skillet over medium-high heat. Add the bacon and cook until brown and crispy, 6 to 8 minutes. Transfer to a plate.
4. In the same skillet, cook the garlic and mushrooms, stirring occasionally and adding a little water or broth to help them cook, until tender and browned, about 3 to 4 minutes.
5. Add the spinach and stir until it begins to wilt, 2 to 3 minutes. Stir in the egg mixture. Set aside 2 tablespoons of bacon for the garnish and stir in the remainder until well combined. Cook, undisturbed, until the edges of the egg are set, about 2 minutes.
6. Transfer to a plate and garnish with the reserved bacon.
