Turkey Burgers with Sweet Potatoes
Phase 3 | Serves 4
Prep time: 10 minutes | Total time: 1 hour 20 minutes
INGREDIENTS
4 medium sweet potatoes
2 garlic cloves
½ cup roughly chopped white onion
1 pound lean ground turkey
2 large egg whites or 1/3 cup liquid egg whites
½ cup sprouted-grain bread crumbs
2 teaspoons sea salt
½ teaspoon black pepper
DIRECTIONS
- Preheat the oven to 400°F. Put the sweet potatoes on the middle rack and bake for 45 minutes to 1 hour or until tender when pierced with a fork.
- In a blender, purée the garlic and onion. Put the turkey in a large mixing bowl, add the onion mixture, egg whites, salt, pepper, and bread crumbs and mix well.
- Divide the mixture into four equal portions then form each portion into a burger.
- Grill the burgers on an outdoor grill or stovetop grill pan set over high heat for 4-5 minutes on each side or until cooked through.
- Serve with the baked sweet potatoes.
*Tip: Make sure to enjoy these with a healthy fat, such as sliced avocado or hummus.
