Ultimate Greek Chopped Salad

INGREDIENTS

Salad:
1 cucumber, diced
4 to 5 ripe roma tomatoes, diced (or 10 ounces grape tomatoes, halved)
1 large red bell pepper, seeded and diced
1/2 small red onion, diced
1/3 cup pitted kalamata olives, coarsely chopped
4 jarred pepperoncini, drained, seeded, and sliced
15-ounce can garbanzo beans, rinsed and drained

Dressing:
3 tablespoons red wine vinegar
1/4 cup olive oil
2 teaspoons dried oregano
1/4 teaspoons sea salt

DIRECTIONS

  1. In a large bowl, whisk together the dressing ingredients.

  2. Add the salad ingredients and toss to combine.

  3. Serve immediately, or refrigerate for at least an hour to let flavors combine. Some dressing will settle on the bottom, so stir before serving.
