Ultimate Greek Chopped Salad
Phase 3 | Serves 3
Prep time: 15 minutes | Total time: 15 minutes
INGREDIENTS
Salad:
1 cucumber, diced
4 to 5 ripe roma tomatoes, diced (or 10 ounces grape tomatoes, halved)
1 large red bell pepper, seeded and diced
1/2 small red onion, diced
1/3 cup pitted kalamata olives, coarsely chopped
4 jarred pepperoncini, drained, seeded, and sliced
15-ounce can garbanzo beans, rinsed and drained
Dressing:
3 tablespoons red wine vinegar
1/4 cup olive oil
2 teaspoons dried oregano
1/4 teaspoons sea salt
DIRECTIONS
- In a large bowl, whisk together the dressing ingredients.
- Add the salad ingredients and toss to combine.
- Serve immediately, or refrigerate for at least an hour to let flavors combine. Some dressing will settle on the bottom, so stir before serving.
