Broccoli, Cauliflower and White Bean Soup

INGREDIENTS
- 4 cups broccoli florets, chopped small and rinsed
- 4 cups cauliflower florets, chopped small and rinsed
- 1 cup carrots, diced
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 1 (15oz) can diced tomatoes
- 2 (15.5oz) cans white beans, rinsed and drained
- 1 tablespoon Italian dried herbs (more to taste)
- A pinch of crushed red pepper flakes, or to taste
- Salt and fresh black pepper
- Chopped fresh flat-leaf parsley, for garnish
DIRECTIONS
- In a large pot or saucepan, add a couple of tablespoons of vegetable broth, onion, and garlic; cook until onions are translucent and garlic is fragrant about 2 minutes. Add carrot and cook stirring occasionally for 2 – 3 minutes. Add the remaining broth, tomatoes, Italian herbs, red pepper flakes, salt, and pepper.
- Bring to a boil, reduce heat and simmer for 5 minutes to combine all the flavors.
- Stir in the white beans, broccoli and cauliflower florets, continue to simmer until the vegetables are cooked through but still crunchy (approx. 5 minutes).
- Season with salt and pepper (to taste), garnish with fresh parsley and serve with brown rice crackers, sprouted grain toast or your favorite Cleanse grain.
