Carrot-Oat Breakfast Cookies
These tasty cookies are the perfect source of healthy fats.

Ingredients
1 cup rolled oats
3/4 cup Fast Metabolism Baking Mix
1 1/2 teaspoon baking powder
1 1/2 teaspoon cinnamon
1/2 cup xylitol (or stevia equivalent)
1 egg
3/4 cup grated carrot
1/4 cup almond or coconut milk
1 Tbls. coconut oil, melted
3/4 cup chopped walnuts
Directions
- Preheat the oven to 375 degrees° F.
- Whisk dry ingredients together. In a separate bowl, beat the egg. Add the carrot, milk, and oil. Add wet ingredients to dry. Stir to combine. Fold in the walnuts. Drop 12 cookies on a parchment-lined baking sheet and bake for 12 to 15 minutes, until the bottoms are a lightly browned.
