Jicama Toast with Egg
The juicy, slightly sweet crunch of jicama is a much-welcome addition to any Phase of the Fast Metabolism Diet. Jicama is an incredible root veggie and provides lots of fiber, vitamin C, calcium, and potassium to your diet. So let's use it in a really creative way and toast it in our toaster!
Phase 3, Cleanse Days 8-10 | Serves 1
Prep time: 15 minutes | Total time: 30 minutes
Ingredients
1 small jicama, peeled
1 large egg
1 cup arugula or microgreens
1 tablespoon sliced jalapeno (optional)
Sea salt and freshly ground black pepper
1 lime wedge, for garnish
Directions
- Cut a 1/4-inch thick slice from the center (the widest part) of the jicama. Cut the remaining jicama into sticks and set aside. Pu the jicama slice in the toaster on the highest setting. Toast it for two cycles, or until it is lightly browned on both sides.
- Meanwhile, in a nonstick skillet, fry the egg to your liking.
- Put the toasted jicama slice on a plate. Top with the arugula, then the egg, then the jalapeno (if using). Season with salt and pepper, and serve with a lime wedge and the jicama stick on the side.
