Lemon Shrimp Bowl

Metabolism Revolution Part 2 Lunch | Serves 1
Prep time: 10 minutes | Total time: 15 minutes
INGREDIENTS MEAL MAP A
2 cups zucchini noodles*
1/4 cup lemon hummus **
4 ounces cooked shrimp***
Sea salt and ground pepper to taste
MEAL MAP B ADAPTATIONS
1 cup cucumber, sliced
1 cup carrot sticks
MEAL MAP C ADAPTATIONS
8 ounces cooked shrimp
1 cup cucumber, sliced
1 cup carrot sticks
INSTRUCTIONS
1. In a large skillet, heat the zucchini noodles over medium-high heat. Add the hummus and shrimp. Cook, stirring, until the entire dish is hot and well mixed, about 5 minutes. (It will take some time for the hummus to melt and cover the zoodles.) Season with salt and pepper.
2. Remove from the heat and serve. For Meal Maps B and C, serve with the cucumber and carrot sticks on the side.
*Turn your zucchini into long noodles using spiralizer, food processor slicing blade, vegetable peeler, or just a sharp knife.
**If you can't find lemon hummus, use regular hummus and add 2 tablespoons fresh lemon juice and 1/2 teaspoon ground pepper.
