Fast Metabolism Cioppino
Brimming with fresh seafood, Cioppino is an Italian-American stew brimming with Omega-3. As you all know, Omega-3 is a superstar! It’s been linked to a lower risk of heart disease and may also lower blood pressure, regulate cholesterol and reduce the symptoms of rheumatoid arthritis. All those benefits in a flavorful, easy to make stew!
Cleanse Days 1-3, Phase 3* | Serves 4
Prep time: 25 minutes | Total time: 35 minutes
INGREDIENTS
1 3/4 cups chicken stock, divided
2 celery stalks, chopped
1 medium onion, chopped
1 green bell pepper, diced small
1 teaspoon crushed red pepper flakes
1 teaspoon sea salt
6 cloves garlic, chopped
1 bay leaf, fresh or dried
1 cup clam juice (100%)
28-ounce can crushed tomatoes
2 tablespoons tomato paste
1 tablespoon fresh thyme leaves
1/4 cup chopped flat-leaf parsley
6 ounces halibut, cut into 2-inch chunks
Freshly ground black pepper
6 ounces (about 8) large shrimp, peeled and deveined
6 ounces (about 12 medium) sea scallops
1 1/2 pounds small raw clams, scrubbed
4 slices sprouted grain toast, cut into sticks or cubes
DIRECTIONS
- Heat a large pot over medium heat. Add 2 tablespoons of the chicken stock and the next 7 ingredients (celery through bay leaf). Sauté for a few minutes, until the vegetables soften. Add the remaining chicken stock and the next 5 ingredients (clam juice through parsley). Bring to a boil, then reduce the heat to medium-low.
- Season the halibut with salt and pepper. Add the halibut and simmer 5 minutes. Add the shrimp, scallops, and clams, and cover the pot. Cook 10 minutes.
- Remove from the heat. Discard any clams that didn’t open. Taste for salt and pepper. Serve the cioppino with the sprouted grain croutons. For a little spice add crushed red pepper to taste.
