Crab Salad

Phase 3

Serves 1
Prep time: 5 minutes  Total time: 5 minutes


2 3–3¾-ounce cans crabmeat
½ cup diced red bell pepper
½ cup shredded red cabbage
¼ cup diced red onion
Juice of ½ lemon (2 tablespoons)
3 tablespoons safflower mayonnaise
Crushed red pepper flakes to taste
2 cups spinach or other Phase 3 greens
1 cup chopped peaches, plums, or other Phase 3 fruit


In a medium mixing bowl, stir together the crabmeat, bell pepper, cabbage, onion, and lemon juice. Add the mayonnaise and mix well. Dress with red pepper flakes to taste. Serve over a bed of spinach or other greens, with the fruit mixed in or on the side.
