Crab Salad

INGREDIENTS

2 3–3¾-ounce cans crabmeat (or fresh)
½ cup diced red bell pepper
½ cup shredded red cabbage
¼ cup diced red onion
Juice of ½ lemon (2 tablespoons)
3 tablespoons safflower mayonnaise
Crushed red pepper flakes to taste
2 cups spinach or other Phase 3 greens
1 cup chopped peaches, plums, or other Phase 3 fruit

DIRECTIONS

  1. In a medium mixing bowl, stir together the crabmeat, bell pepper, cabbage, onion, and lemon juice. 
  2. Add the mayonnaise and mix well. Dress with red pepper flakes to taste. 
  3. Serve over a bed of spinach or other greens, with the fruit mixed in or on the side.
