Hard-Boiled Egg White Stuffed with Minced Veggies

3 large hard-boiled eggs
½ cup cooked, minced Phase 2 veggies
Peel the eggs, cut them in half lengthwise, and discard the yolks. Fill with the minced veggies and serve right away.
TIP: When I make this recipe, I often use my leftover vegetables from the night before. Try it with onions, mushrooms, bell peppers, or cabbage.
