Pineapple-Pistachio Slaw

INGREDIENTS

1 cup chopped pineapple, with its juice
1/2 teaspoon grated fresh ginger
1-2 drops stevia
Pinch sea salt
Dash cayenne
1 cup shredded cabbage
1 carrot, shredded
1/4 cup chopped raw pistachios
2 tablespoons thinly sliced green onion
2 tablespoons chopped fresh cilantro

DIRECTIONS

  1. In a serving bowl, mix together the first five ingredients (pineapple through cayenne)

  2. Add the remaining ingredients, toss to combine, and serve.
