Ingredients

1/4 cup safflower mayonnaise
Juice of 1/2 a lime
2 tablespoons Dijon mustard (no sugar added)
1 tablespoon chopped dill pickle
2 teaspoons fresh horseradish
2 teaspoons chopped capers
1 teaspoon hot sauce
1/8 teaspoon freshly ground black pepper
2 large collard leaves
1/2 pound thinly sliced roast beef

Directions

  1. In a small bowl, combine the mayonnaise, lime juice, mustard, pickle, horseradish, capers, hot sauce, salt, and pepper. Set the remoulade aside.

  2. Pour 2 inches of water into a large saucepan. Bring the water to a boil over high heat. Put the collard leaves in a steamer basket and set it over the boiling water. Steam the collard leaves lightly, about 3 minutes, just to make them more flexible. Divide the roast beef between the two leaves. Divide the remoulade between the two leaves, then roll each one up, tucking in the ends. cut each roll in half and serve.
