Sardine “Sushi” Rolls

Prep time: 10 minutes | Total time: 20 minutes

INGREDIENTS

2 8-inch nori sheets
6 oz. can of sardines (about 1 1/2 tins)
1/2 cup cooked quinoa
1/2 cup julienned cucumbers and carrots

    Dipping Sauces

    Coconut aminos
    Tamari
    Coconut vinegar
    Pure wasabi (optional)

    DIRECTIONS

    1. Mix 1-2 teaspoons hot water into the cooked quinoa, to make it more sticky.

    2. Lay out the nori sheets. Along each of the lengthwise ends, spread the quinoa evenly.

    3. Top with the sardines and carrots/cucumbers. Roll up the nori sheet carefully. Slice into 1-inch pieces. Serve with your favorite dipping sauce.

    4. To make this a complete meal, add a healthy fat serving and 1.5 cups of veggies on the side.
