Slow Cooker Hungarian Goulash

The gravy in this Hungarian Goulash recipe is savory and totally delicious. I love this recipe on days when I just need that extra bit of comfort (Phase 1!). This stew is an incredible comfort food recipe. It's just like a giant hug in a bowl. Remember to add your favorite Phase 1 grain if you're on the Fast Metabolism Diet!

Prep time: 30 minutes | Total time: 6 hours 30 minutes

Ingredients

2 pounds beef stew meat
1 pound white mushrooms, sliced
4 carrots, sliced on an angle
1 large yellow onion, diced
1 rutabaga, peeled and diced
1 parsnip, peeled and sliced on an angle
3 garlic cloves, minced
1/4 cup tomato paste
1/4 cup liquid aminos
3 tablespoons Hungarian paprika
3 tablespoons xylitol (optional)
2 teaspoons sea salt
1 teaspoon freshly ground black pepper
4 cups beef broth
1/2 cup chopped fresh parsley

Directions

  1. Put the beef in a slow cooker. Add the mushrooms, carrots, onion, rutabaga, parsnip, and garlic.

  2. In a large bowl, whisk together the tomato paste, liquid aminos, paprika, xylitol (if using), salt, and pepper. Whisk in the broth. Pour the liquid into the slow cooker over the vegetables and meat. Cover and cook on high for 6 hours. Serve topped with the parsley.
