Spiced Lamb Scramble

Remember, spices like cinnamon, coriander, paprika and cumin really help boost your digestion! Feel free to use as much or as little as you like, but loading up on them will bring so much flavor and incredible smells to your kitchen, this is one breakfast dish you'll want to make over and over again.

Ingredients

8 ounces ground lamb
1 tablespoon chopped fresh flat-leaf parsley
1 garlic clove, minced
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon sea salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground coriander
1/4 teaspoon freshly ground black pepper
Dash of cayenne pepper (optional)
2 tablespoons grapeseed oil
1 large sweet potato, peeled and cut into small cubes
1 large shallot, minced
1/2 cup chopped broccoli
3 large eggs, lightly beaten

Directions

  1. In a large skillet, combine the ground lamb, parsley, garlic, paprika, cumin, salt, cinnamon, coriander, black pepper, and cayenne (if using). Cook over medium heat, stirring frequently, until the lamb is browned. Scoop the lamb mixture into a bowl and set aside.

  2. Without cleaning the pan heat 1 tablespoon of the grapeseed oil in the same skillet. Add the sweet potato and shallot. Cook, stirring frequently, until the sweet potato is easily pierced with a fork. Add the broccoli and cook, stirring frequently, until it is bright green. Return the lamb mixture to the skillet and stir to fully combine everything.

  3. Push everything to the edges of the pan. Pour the eggs into the middle and stir to scramble them. When they are firm, mix everything together to combine with the eggs. Serve immediately.
