Sweet Potato Turkey Burger Sliders

Turkey burger with sweet potato bun.

Instead of using buns for our burgers, let's use some of our favorite veggies! I used sweet potato for these incredible turkey burgers and topped mine with lettuce, onions, pickles and tomatoes, but you can use any combo of Phase 3 veggies that you like, or top yours with my sugar-free ketchup recipe

Sweet potatoes are an incredible source of vitamin-A, a huge immune-system booster. They're also loaded with a rockstar micronutrient called magnesium, which helps manage stress, anxiety and depression.

Ingredients

1 large sweet potato, peeled, cut into four 1/4-inch-thick rounds from the center (use the rest of the sweet potato for another meal)
1 pound ground turkey
2 scallions, thinly sliced
1 garlic clove, minced
2 tablespoons quick-cooking oats
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1 teaspoon olive oil

Garlic Avocado Aioli

1 large avocado
1/4 cup safflower mayonnaise
1 garlic clove, pressed through a garlic press
2 teaspoons fresh lemon juice
1/2 teaspoon sea salt, or to taste

Optional Toppings

Tomato slices
Lettuce leaves
Thinly sliced red onion rings
Pickles

Directions

  1. Preheat the oven to 375 degrees F. Line a large rimmed baking sheet with parchment paper.

  2. Arrange the sweet potato slices in a single layer on the prepared baking sheet. Bake for 20 minutes, or until they just start to brown and you can pierce them easily with a fork, flipping them carefully after 10 minutes.

  3. Meanwhile, preheat a grill or broiler.

  4. In a medium bowl, combine the ground turkey, scallions, garlic, oats, salt, and pepper. Mix everything together with your hands, then shape the mixture into eight small patties. Brush the grill grates or a broiler pan with the olive oil and grill or broil the patties for 5 minutes on each side.

  5. Make the aioli: in a blender, combine all the ingredients for the aioli. Blend until smooth. Use immediately.

  6. To serve, spread the aioli on each sweet potato slice. Top each slice with a turkey burger and any additional Phase 3 toppings you like. Serve open-phased.
