Apple Fennel Slaw

Ingredients

  • 1 shallot, thinly sliced (about 2 tablespoons)
  • 1 tablespoon white balsamic or white wine vinegar
  • 1 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 3 small fennel bulbs, halved lengthwise, cored, and very thinly sliced (about 3 cups)
  • 3 heads Belgian endive, halved lengthwise, cored, and very thinly sliced (about 2 1/2 cups)
  • 1 large Fuji or other crisp, sweet apple, halved lengthwise, cored, and very thinly sliced (about 2 1/2 cups)
  • 2 cups cooked cannellini beans (Optional, to make this a meal)

Directions

Whisk together the shallot, vinegar, salt, and pepper in a large, nonreactive bowl. Slowly whisk in the oil until it’s incorporated. Add the sliced fennel, endive, and apple and toss to coat. Taste and adjust the seasoning as desired. Serve this as a side dish, or add cannellini beans to make it a one-dish meal.
