Beef Kefta Patties with Cucumber and Lemon

Cucumbers are magical and they’re a “free food” on all phases of The Fast Metabolism Diet, but they’re especially welcome on Phase 2. You can eat as many cucumbers as you want, which makes them the perfect side dish to these delicious Kefta Beef Patties. Full of flavor, cumin aids in digestion and can even help improve concentration and cognitive function, while cilantro promotes heart health along with being a natural mood booster! You’ll feel super good after eating this scrumptious Phase 2 meal.

Beef Kefta Patties with Cucumber and Lemon

1 pound ground sirloin
1/4 cup plus 2 tablespoons chopped fresh flat-leaf parsley, divided
1/4 cup chopped fresh cilantro
1 tablespoon chopped peeled fresh ginger
2 teaspoons ground coriander
1 teaspoon ground cumin
1/2 teaspoon sea salt
1/2 teaspoon ground cinnamon
2 cups thinly sliced English cucumber
1 tablespoon fresh lemon juice
1/2 teaspoon freshly ground black pepper


Heat a nonstick grill pan over medium-high heat. Combine the beef, 1/4 cup parsley, cilantro, and the next 5 ingredients in a medium bowl. Divide the mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty. Add the patties to the pan; cook 3 minutes on each side or until desired degree of doneness.

Combine the cucumber, lemon juice, remaining 2 tablespoons parsley, and pepper in a small bowl. Arrange 1 patty and 1/2 cup cucumber mixture on each of 4 plates, and serve.
