Braised Beef and Mushrooms
This one-pot Braised Beef and Mushrooms is bound to become your next Phase 2 favorite. Perfectly seasoned beef and a rich source of vitamins and minerals it will melt in your mouth and have you looking forward to lunch the next day.
Phase 2 | Serves 8
Prep time: 10 minutes | Total time: 5 1/2 to 9 1/2 hours
INGREDIENTS
4 cups finely diced onions
2 pounds beef stew meat
2 pounds cremini (Baby Bella) mushrooms, cut into ½-inch pieces
2 large cloves garlic, crushed and peeled
2 tablespoons sweet paprika
2 teaspoons chopped fresh marjoram, or 1 teaspoon dried
Freshly ground black pepper, to taste
1 teaspoon sea salt, divided
2 tablespoons arrowroot
8 large shiitake mushroom caps, cut into ½-inch pieces
Finely minced fresh tarragon or dill, for garnish
DIRECTIONS
- In a 5-quart or larger slow cooker, combine the first 7 ingredients (onions through pepper), plus ½ teaspoon of the salt. Cover and cook on low 8 hours (or high 4 hours).
- Whisk the arrowroot into ¼ cup water until smooth. Stir the arrowroot mixture and shiitake mushrooms into the stew in the slow cooker. Cover and cook on high for 1 ½ hours more. Serve garnished with tarragon or dill, if desired.
