Sweet potatoes are an amazing addition to a healthy diet, and they're so versatile! This sweet and savory breakfast hash is an amazing way to start your day. Remember it is so important to eat breakfast within 30 minutes of waking up so you can fire up your metabolism and get it going for the day ahead.

Metabolism Revolution Part 1 Breakfast | Serves 1
Prep time: 10 minutes | Total time: 20 minutes

INGREDIENTS MEAL MAP A

2 slices nitrate-free turkey bacon, chopped
1 cup apple, diced
1/2 cup onion, diced
1 1/2 cups baby spinach
1/4 teaspoon sea salt
1/4 teaspoon ground cinnamon
1 egg

MEAL MAP B ADAPTATIONS

1 cup onion, diced
3 cups baby spinach

MEAL MAP C ADAPTATIONS

4 slices nitrate-free turkey bacon, chopped
1 cup onion, diced
3 cups baby spinach
2 eggs

INSTRUCTIONS 

1. In a heavy medium skillet, cook the turkey bacon over medium-high heat. When the bacon begins to brown and is halfway done, add the sweet potato. Cook, stirring, and add a little water as needed to help cook the sweet potato. 

2. Once the sweet potatoes are getting browned and soft, add the apple and onion to the pan and stir. Reduce the heat to medium or medium-low and cover the pan. Cook for about 45 seconds to 1 minute, uncover and stir. Add the salt and cinnamon and cook, stirring, until the mixture is nicely browned and the apple and onions are softened and lightly browned. Add the spinach and cook until wilted. 

3. Remove from the pan and transfer the hash to a plate. In a nonstick skillet, fry the egg without oil (or poach it) and place it on top of the apple-sweet potato hash. Serve immediately.
