Metabolism Revolution: Breakfast Part 1

TURKEY BACON, *NITRATE-FREE, CHOPPED 2 SLICES 2 SLICES 4 SLICES
SWEET POTATO 1/2 CUP DICED 1/2 CUP DICED 1/2 CUP DICED
APPLE 1 CUP DICED
1 CUP DICED
1 CUP DICED
ONION
1/2 CUP DICED
1 CUP DICED 1 CUP DICED
BABY SPINACH 1 1/2 CUPS 3 CUPS 3 CUPS
SEA SALT 1/4 TEASPOON
1/4 TEASPOON
1/4 TEASPOON
GROUND CINNAMON
1/4 TEASPOON
1/4 TEASPOON
1/4 TEASPOON
EGG(S)* 1 1 2

 

1. In a heavy medium skillet, cook the turkey bacon over medium-high heat. When the bacon begins to brown and is halfway done, add the sweet potato. Cook, stirring, and add a little water is needed to help cook the sweet potato. 

2. Once the sweet potatoes are getting browned and soft, add the apple and onion to the pan and stir. Reduce the heat to medium or medium-low and cover the pan. Cook for about 45 seconds to 1 minute, uncover and stir. Add the salt and cinnamon and cook, stirring, until the mixture is nicely browned and the apple and onions are softened and lightly browned. Add the spinach and cook until wilted. 

3. Remove from the pan and transfer the hash to a plate. In a nonstick skillet, fry the egg without oil (or poach it) and place it on top of the apple-sweet potato hash. Serve immediately.
