2 TABLESPOONS DICED
1/4 CUP DICED
JALAPENO, SEEDED 1 TEASPOON FINELY CHOPPED
1 TEASPOON FINELY CHOPPED
2 TEASPOONS FINELY CHOPPED
CILANTRO, FRESH 1 TABLESPOON CHOPPED
1 TABLESPOON CHOPPED
2 TABLESPOONS CHOPPED
FRESH LIME JUICE 1 1/2 TEASPOONS
1 1/2 TEASPOONS
2 TABLESPOONS
SEA SALT AND GROUND PEPPER AS NEEDED

COD FILLET* 4 OUNCES
4 OUNCES
4 OUNCES
MIXED GREENS 4 CUPS
4 CUPS
4 CUPS

 

1. To prepare the salsa, in a medium bowl, combine the nectarines, red onion, jalapeno, cilantro, lime juice, and salt and pepper to taste. Toss to combine. Cover the bowl and refrigerate for 20 to 30 minutes to allow the flavors to meld. 

2. While the salsa chills, preheat the broiler pan with parchment paper or use a well-seasoned cast-iron skillet. 

3. Season the cod with salt and pepper and set it on the prepared pan. Broil the cod until the flesh turns opaque and flakes easily, 8 to 10 minutes. 

4. Serve the code over a bed of mixed greens topped with the salsa.
