Broiled Cod with Nectarine Salsa Over Mixed Greens
This cod is so easy to make and so delicious with the nectarine salsa, even picky eaters will love this recipe!
Metabolism Revolution Part 1 Lunch | Serves 1
Prep time: 15 minutes | Total time: 45 minutes
INGREDIENTS MEAL MAP A AND B
1 nectarine
2 tablespoons red onion, diced
1 teaspoon jalapeno, finely chopped
1 tablespoon fresh cilantro, chopped
1 1/2 teaspoons fresh lime juice
4 ounces cod fillet
4 cups mixed greens
Sea salt and ground pepper to taste
MEAL MAP C ADAPTATIONS
2 nectarines
1/4 cup red onion, diced
2 teaspoons jalapeno, finely chopped
2 tablespoons fresh cilantro, chopped
2 tablespoons fresh lime juice
INSTRUCTIONS
1. To prepare the salsa, in a medium bowl, combine the nectarines, red onion, jalapeno, cilantro, lime juice, and salt and pepper to taste. Toss to combine. Cover the bowl and refrigerate for 20 to 30 minutes to allow the flavors to meld.
2. While the salsa chills, preheat the broiler pan with parchment paper or use a well-seasoned cast-iron skillet.
3. Season the cod with salt and pepper and set it on the prepared pan. Broil the cod until the flesh turns opaque and flakes easily, 8 to 10 minutes.
4. Serve the code over a bed of mixed greens topped with the salsa.
