Burrito Salad


Skip the tortillas and put a twist on your burrito with this super colorful, easy to put together, salad. Get creative by adding some of your favorite spices and veggies. Mix it up by changing out the protein. The variations on this Burrito Salad are endless. Let me know what you come up with!

Prep time: 5 minutes | Total time: 5 minutes

INGREDIENTS

1 1/2 cups torn or shredded lettuce (any type except iceberg)
1 cup cooked brown rice
1 cup pineapple
1/2 cup cooked (or canned, drained) black beans
1 to 2 cups Phase 1 vegetables (we used tomatoes, bell peppers, red and green onions, and roasted sweet potatoes)
2 tablespoons salsa
Chopped fresh cilantro
Lime wedge


DIRECTIONS

  1. Place the lettuce in a large serving bowl or reusable container. Top with the remaining ingredients, with a lime wedge for squeezing.
