Cajun Shrimp and Black Beans
This is the most delicious cajun shrimp recipe! The spices stick to the shrimp and create an amazing crust of flavor.

INGREDIENTS MEAL MAP A
1/4 teaspoon cajun seasoning
1/8 teaspoon ground pepper, plus more as needed
3/4 teaspoon chili powder
3/4 teaspoon onion powder
1/4 teaspoon ground cumin
3/4 teaspoon smoked paprika
4 ounces raw shrimp (medium size, peeled and deveined, fresh or defrosted)
1/2 lime, juiced
Fresh cilantro, chopped, as needed
Sea salt, to taste
1/2 cup black beans, drained and rinsed
2 cups cauliflower florets
MEAL MAP B ADAPTATIONS
4 cups cauliflower florets
MEAL MAP C ADAPTATIONS
1/2 teaspoon cajun seasoning
1/2 teaspoon ground pepper, plus more as needed
1 1/4 teaspoon chili powder
1 1/4 teaspoon onion powder
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
4 ounces raw shrimp (medium size, peeled and deveined, fresh or defrosted)
4 cups cauliflower florets
INSTRUCTIONS
1. Preheat the oven to 450º F. Line a baking sheet with parchment paper.
2. In a large bowl, combine the Cajun seasoning, pepper, chili powder, onion powder, cumin, and paprika and mix well. Add the shrimp and coat evenly.
3. Spread the seasoned shrimp in an even layer on the prepared baking sheet. Bake for 10-12 minutes. Remove from the oven, squeeze the lime juice over the entire pan, and sprinkle with cilantro, salt, and pepper.
4. While the shrimp is cooking, steam the cauliflower florets in a steamer or steamer basket over boiling water for about 5 minutes, or until crisp-tender.
5. Serve the shrimp with warmed black beans and cauliflower florets.
