Chia-Chive Dressing

This mild and creamy vinaigrette balances garlic with shallots and chives for a fresh, familiar taste. Chia seeds add healthy fat and texture.

Ingredients

1 cup unsweetened almond milk, hemp milk or coconut milk
1 tablespoon chia seeds
1/2 cup minced shallots
2 cloves garlic
1/2 cup fresh chives
1/4 cup white balsamic vinegar
1/2 teaspoon sea salt
1/4 teaspoon pepper

    Directions

    1. Place all ingredients into a blender and blend until smooth. Or toss them in a jar, cover tightly and shake until emulsified.
      Portion is 2-4 tablespoons.
