Chilled Cantaloupe-Mint Soup

Phase 1 | Serves 4 | Prep time: 5 minutes |Total time: 1 hour 5 minutes

Ingredients

  • 1 cantaloupe, cut into chunks (about 4 cups)
  • 1/2 cup loosely packed fresh mint leaves, plus more for garnish
  • 3 tablespoons fresh lime juice
  • 2 tablespoons xylitol
  • Pinch of sea salt

 Directions

  1. In a blender or food processor, purée all ingredients until smooth.
  2. Chill at least 1 hour before serving, garnished with mint. (This soup can be made up to 2 days ahead.)
