Crab-Stuffed Bell Peppers

Remember, eat to treat! Crab is a decadent source of protein and so delicious in these super simple stuffed bell peppers. If crab is not your favorite choice of seafood, go ahead and substitute tuna instead.

Ingredients

12 ounces lump crabmeat 
1/3 cup safflower mayonnaise
3 celery stalks, sliced
1/2 cup chopped fresh parsley leaves
1 shallot, minced
Zest and juice of 1 lemon
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried dill
6 medium bell peppers (any color), tops cut off, seeds removed

Directions

In a medium bowl, stir together the crab and mayonnaise until combined. Add the celery, parsley, shallot, lemon juice, salt, black pepper, and dill. Stuff the crab mixture into the peppers and top with the lemon zest.
