Fast Metabolism Cabbage Soup

Phase 1, 3 and Cleanse | Serves 6

INGREDIENTS

2 tablespoons extra-virgin olive oil (Phase 3 only)
2 carrots, chopped
2 stalks celery, chopped
1 large onion, chopped
1/2 teaspoon chili powder
Sea salt
Freshly ground black pepper
2 15-ounce cans white beans, drained and rinsed
2 cloves garlic, minced
1 teaspoon fresh thyme leaves
6 cups chicken (or vegetable) broth
1/2 large head cabbage, chopped
15-ounce can diced fire-roasted tomatoes
Pinch crushed red pepper flakes
2 tablespoons chopped fresh parsley, plus more for garnish
Phase-appropriate crackers or bread, to serve (optional for Phase 3)

DIRECTIONS

  1. Heat a large pot over medium heat. Add the olive oil (Phase 3 only), carrots, celery, and onion. Season with chili powder, and salt and pepper to taste. Cook, stirring often, until the vegetables are soft, 5 to 6 minutes. Stir in the beans, garlic, and thyme, and cook 30 seconds. Add the broth, and bring to a simmer. 

  2. Stir in the tomatoes and cabbage and simmer until the cabbage is wilted, about 6 minutes. 

  3. Remove from heat. Stir in the crushed red pepper flakes and parsley. Taste, and add more salt and pepper if needed. Garnish with more parsley, if you like. Serve with Phase-appropriate crackers or bread.
