Grilled Chicken and Blueberry Salad

What I often tell my clients who have blood sugar issues is that they are, in fact, starving on cellular, structural, and hormonal levels. Sometimes they look at me as if I'm crazy. Yet excess body weight piles on easily in the presence of blood sugar issues and is actually a symptom of starvation. When you cannot access the fuel that is designed to be delivered to your cells, biochemically you are experiencing famine.

Prep Time: 10 minutes | Total Time: 10 minutes

INGREDIENTS

5 cups mixed salad greens
1 cup fresh blueberries
1/4 cup chopped or slivered raw almonds
1 cup leftover grilled chicken, diced

    Dressing:

    1/4 cup olive oil
    1/4 cup apple cider vinegar
    1/4 cup fresh blueberries
    30 drops liquid stevia, or to taste
    Sea salt and black pepper

      DIRECTIONS

      1. In a large bowl, toss together the salad greens, blueberries, almonds, and chicken.

      2. For the salad dressing, blend the olive oil, apple cider vinegar, blueberries, and stevia in a blender until smooth. Add salt and pepper to taste. Serve with additional fruit or add extra blueberries.
