Ham and Rice Breakfast Skillet

This no-fuss Metabolism Revolution breakfast goes together quickly with only a handful of ingredients, and while the ingredient list may be short, the nutritional impact it brings to the table is powerful. 

Revolution Part 1 - Breakfast | Serves 1
Prep time: 5 minutes | Total time: 10 minutes

INGREDIENTS MEAL MAP A

1 1/2 cups sliced fresh mushrooms
1/2 cup chopped onion
1-2 tablespoons water (or homemade broth)
4 ounces fully cooked nitrate-free ham steak, diced
1/8 teaspoon black pepper
1/2 cup cooked brown rice
1 green onion, sliced
1 orange

MEAL MAP B ADAPTATIONS

3 cups sliced fresh mushrooms
1 cup chopped onion
8 ounces fully cooked nitrate-free ham steak, diced 

MEAL MAP C ADAPTATIONS

3 cups sliced fresh mushrooms
1 cup chopped onion 

DIRECTIONS

  1. In a large nonstick skillet over medium-high heat, sauté the mushrooms and onion in a few tablespoons of water (or homemade broth) until tender, about 4 minutes.

  2. Stir in the ham, pepper, and the brown rice. Reduce the heat; stirring until well mixed. 

  3. Fluff with a fork. Top with green onions and serve with an orange.
