Mint Chocolate Chip Smoothie Bowl
Did you know mint is super rich in vitamin A? Vitamin A is a critical nutrient that aids in eye health. This phenomenal herb is also loaded with antioxidants! Remember, antioxidants help protect your cells from damage caused by free radicals!
Phase 3 | Serves 1
Prep time: 5 minutes | Total time: 10 minutes
Ingredients
1 cup cauliflower florets, fresh or frozen (use frozen for a frostier bowl)
1 cup baby spinach, fresh or frozen (use frozen for a frostier bowl)
1 cup unsweetened almond milk
2 tablespoons raw cashews
2 tablespoons raw cacao nibs
¼ cup chopped fresh mint leaves (or 4 drops food-grade peppermint essential oil)
Unsweetened coconut flakes (garnish)
Stevia or xylitol to taste (optional)
Directions
- In a blender, add the cauliflower, spinach, almond milk, cashews, and stevia or xylitol to taste (if using). Blend for two minutes, adding a little water if it’s too thick.
- Add half the cacao nibs and pulse a few more times.
- Pour the mixture into a bowl. If you are using mint oil, stir it in. Top with the remaining cacao nibs, mint leaves (if using), and coconut flakes.
