Mushroom Meatloaf

Prep time: 10 minutes | Total time: 40 to 45 minutes

Ingredients

1 pound ground beef
2 egg whites
1 cup finely chopped white button mushrooms
1/2 cup finely minced onion
1 1/2 tsp. minced garlic
1 1/2 tsp. tamari or coconut aminos
1 1/2 tsp. fresh thyme leaves
1/2 tsp. dried oregano
1/2 tsp. black pepper
1/4 tsp. sea salt
1/4 tsp. crushed red pepper flakes

    Directions

    1. Preheat the oven to 350 degrees F.

    2. Mix all ingredients in a large bowl until well combined.

    3. Lightly press the mixture into an 8-by-4-inch loaf pan.

    4. Bake for 30 to 35 minutes (the inside will no longer be pink).

    5. Let the meatloaf rest for 5 minutes before slicing.

    6. Serve with lots of Phase 2 veggies like steamed broccoli or greens.
