Oatmeal-Almond Berry Pancakes
On Phase 3, I want you to take pleasure in the foods you eat. These fantastic pancakes are delish and loaded with that amazing healthy fat your body needs to unleash the burn!
Phase 3 | Serves 2 (1 serving is 2 pancakes)
Prep time: 5 minutes | Total time: 10 minutes
INGREDIENTS
¾ cup almond milk
½ cup almond flour
½ cup rolled or old-fashioned oats
1 tablespoon birch xylitol
2 tablespoons olive oil
1 teaspoon vanilla extract
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon sea salt
1 large egg
2 cups blueberries
DIRECTIONS
- Put all the ingredients except the blueberries in a blender and blend until smooth.
- Heat a lightly oiled griddle or frying pan and pour about ½ cup of batter for each of the 4 pancakes onto the hot pan. Cook for about a minute on each side until lightly browned. Serve 2 pancakes with 1 cup of blueberries on top or on the side, and any Phase 3 veggie.
