Red Cabbage Turkey Wraps
This super simple recipe is perfect for summer. Fresh oregano and lemon zest really make the veggies pop. Remember, you can always replace the brown rice in this recipe with a Phase 3 grain for the Fast Metabolism Diet, or try a veggie version by replacing the turkey with 1 (15-ounce) can chickpeas, drained, rinsed, and coarsely chopped. It's up to you!

Ingredients
1 pound cooked turkey breast, or 1 pound nitrate-free, no-sugar-added deli turkey
2 fresh peaches, pitted and diced
2 tomatoes, chopped
1 cucumber, peeled, seeded, and cut into small cubes
1 cup cooked brown rice, cooled but not refrigerated
1/2 cup fresh cilantro leaves
2 tablespoons extra-virgin olive oil
1 teaspoon dried oregano, crumbled
1 teaspoon lemon zest
1 teaspoon sea salt
1 teaspoon hot sauce (optional)
1/2 teaspoon freshly ground black pepper
8 large red cabbage leaves
Directions
- In a large bowl, combine the turkey, peaches, tomatoes, cucumber, rice, cilantro, olive oil, oregano, lemon zest, salt, hot sauce (if using), and pepper and mix thoroughly. Lay out the cabbage leaves and divide the turkey mixture among them, mounding it in the middle. Roll up the leaves, tucking in the ends, and serve.
