Roast Beef Wraps with Plums

INGREDIENTS
- 1/4 cup rice vinegar
- 8 to 10 drops liquid stevia
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup finely chopped onion
- 1 tablespoon grated ginger
- 4 sprouted-grain tortillas
- 4 large lettuce leaves
- 1 pound thinly sliced roast beef
- 4 plums, thinly sliced
- 1 small cucumber, halved lengthwise and thinly sliced
- 1 large carrot, cut into matchsticks
- 1/2 cup fresh mint leaves
DIRECTIONS
- In a small bowl, whisk together the vinegar, stevia, salt, and pepper.
- Stir in the onion and ginger.
- Fill the tortillas with the lettuce, roast beef, plums, cucumbers, carrots, and mint.
- Serve with the vinaigrette for drizzling.
